Wilkin & Sons Joint Managing Director Walter Scott, says: "We started by examining ways to reduce materials use and save energy - once we started looking we found many opportunities which have reduced the operational costs of the company. In production we now simmer our oranges twice in the same water and then re-use the orange water or liquor in the marmalade making process - instead of using the water once then throwing it away. In the manufacturing process a great opportunity was found to lighten the jam jars and lids (downgauging). This has had three fantastic results; we use less material and energy in the production process and lighter full jars means less fuel is used in transporting the jam to market."
